The hand harvested fruit was whole bunch pressed to retain the pristine fruit characters and minimise phenolic extraction. The juice was then transferred to French oak barrels, 20% of which were new, for fermentation and maturation on lees, with monthly stirring, for 10 months prior to bottling in February 2019.
