The Sauvignon Blanc was hand harvested from both our own vineyard, and Hugh Robinson’s warm Moorooduc site, pressed as whole bunches, and then cloudy juice transferred to old French barrels for wild fermentation to highlight the fresh fruit flavours but bring some textural complexity to the wine. The wine matured for 4 months before being bottled in August 2018.
